Medditeranean Zucchini and Feta

Cooking and prep time: 15-20 minutes
Difficulty: Easy

Ingredients

2 large zucchini’s 

1 packet of feta (200g)

1 Chorizo (optional, leave out for a vegetarian option)

oregano

1 Red onion 

Garlic 

1 egg 

1 cup of Spinach 

parmasen cheese

1 fresh french bread stick

Method:

Thinly slice and fry the chorizo on a high heat pan until slighly crisp. Set aside.

Slice the red onion into large pieces and dice the garlic. Using the same pan as the chorizo, fry the onion for 3 mintues until slighly clear and then add in the garlic, oregano and parsely.

Cut the Zucchini and feta into roughly 1.5cm cubes, add the Zucchini into the pan. Once softenened add add the chorizo and cubed feta back into the pan along with the cup of spinach so it can start to wilt.

Whisk the egg and then add into the pan stiring it all together with some salt and pepper to taste. Sprinkle some parmasen or peccorino on top and serve with fresh crusty bread!.
